Mini Oreo Pies

Makes 6

6 oreo cookies
2 tablespoons butter
1/2 cup powdered sugar
2 tablespoons heavy whipping cream


pull apart oreos and separate the cookies from the cream.
set 1 cookie aside and crush up.
mix the remaining cookies with the melted butter.
press into cupcake wrappers and bake at 350* for 7 minutes

while cooling, whip cream on high until peaks form.
add sugar and oreo cream, continue to whisk.
scoop onto cookies.
sprinkle crushed up oreo cookie ontop.
put in freezer so whipped topping can harden.

take out and enjoy!

Moms Oatmeal Chocolate Chip Muffins

Serves 12

1 cup old fashioned rolled oats
1 cup nonfat milk
1 cup flour
1/2 cup brown sugar
1/2 cup applesauce
2 egg whites
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp sugar
1/4 cup chocolate chips

-Soak the oats in milk for 1 hour
-Preheat the oven to 400* and line muffin pan with cupcake liners
-Combine the oat mixture (oats and milk) with applesauce and egg whites and mix until combined.
-In a separate bowl mesure and stir the flour, brown sugar, baking powder, baking soda, and salt.
-Add wet mixture to dry mixture and mix until just combined.

-Add the chocolate chips.
-Spoon mixture into muffin pan.
-Mix the cinnamon and sugar together and top each muffin with some of the mixture
-Bake 20 minutes

Tangy Lemon Tequila Ice Cream

Serving Size: 1/2 cup
Makes 5 Servings

1/2 cup stevia
1 cup vanilla almond milk
1 6 oz container lemon chobani (greek yogurt)
1 oz tequila
1/2 lemon juice

In a mixer whisk on medium speed stevia and almond milk for 2 minutes
Add Lemon yogurt and whisk for another 2 minutes
Add tequila and lemon juice (I also added a few drops of food coloring for the bright yellow color)
Pour into an ice cream machine and let turn for 23 minutes!

Peanut Butter Chocolate Granola

1/2 cup vanilla almond granola
.2 oz pine nuts
10 grams almonds
7 grams sunflower seeds
3 tablespoons peanut butter
1 tablespoon chocolate chips

Preheat oven to 300*
Mix all ingredients in a bowl except chocolate chips
Spread onto cookie sheet and bake for 15 minutes
Once cool, stir in chocolate chips!

Granola Bars

1/2 cup vanila almond granola
.2 oz pine nuts
10 grams almonds
7 grams sunflower seeds
1 oz craisins
1/8 cup syrup

preheat oven to 300*
In a bowl mix all ingredients
Spray cookie sheet with non stick cooking spray
Scoop granola onto cookie sheet and bake for 25 minutes
Let cool before taking off cookie sheet, that will make them stick together.

Brownie Cookies

1/2 cup flour
1/4 cup stevia
1 tablespoon brown sugar
1 1/2 tablespoons cocoa powder
1 tablespoon butter ( i use Earth Balance)
2 tablespoons vegetable oil
1/4 cup almond milk
1/4 cup chopped walnuts

Preheat oven to 350*
In a mixer blend flour, stevia, brown sugar and cocoa powder.
Add butter, vegetable oil and milk.
Stir in walnuts.

Spray baking 8x8 baking pan with non stick spray
Bake 9-10 minutes

SANDWICH COOKIES

Makes 12 sandwich cookies

Cookie:
6 tablespoons earth balance butter
1/4 cup stevia
1/4 tsp vanilla
Dash salt
Filling:
1/8 cup flour
1 tablespoon brown sugar
1 tablespoon stevia
1 tablespoon oil
3 tablespoons chocolate chips

With this recipe I'm mixing a few recipes together to make one amazing sandwich cookie!
In mixer mix butter an stevia
Add vanilla
In a separate bowl mix flour and salt. Add to mixer.
Wrap in plastic and chill 45 minutes.
Meanwhile, mix all filling ingredients except chocolate chips.

Press dough into 24 cookies and bake at 350* for 7 minutes.
Right out of the oven add chocolate chips. Sprinkle with crumble and sandwich cookies together.

One Bowl Cake Cookies

Devils food cake mix
2 eggs
1/2 cup oil
1 cup chocolate chips (optional)

preheat oven  to 350*
mix cake mix, eggs and oil in a bowl with a spoon.
add chocolate chips
drop onto cookie sheet
bake for 8-10 minutes

2 Bite Strawberry Pies

makes 24

cookies:
12 tablespoons butter (I use Earth Balance)
1/2 cup stevia
1/2 tsp vanilla
1 3/4 cup flour
dash salt
1/2 cup (200g) cut up strawberries

crumble:
1/2 cup flour
4 tablespoons brown sugar
3 tablespoons stevia
4 tablespoons oil

In mixer, mix butter and stevia.
Add vanilla.
Separately mix flour and salt.
Pour into mixer and mix on low.
Add about 1/4 cup water to make it more of a dough.
Wrap in plastic and chill for 45 minutes.

Preheat oven to 350*
Press dough ito 24 cupcake tins.
Bake 20 minutes.

Crumble:
Mix flour, brown sugar and stevia in a mixer on low speed.
Slowly add oil until it turns into a crumble.

Once out of the oven, place cut up strawberries on top,
Add the crumble on top of the strawberries and push it down firmly.
Bake another 6 minutes.

Coffee Ice Cream

Makes 5 cups

3 1/3 cups almond milk
2 cups no calorie sweetener (like splenda)
1 3/4 cups whole milk
1 teaspoon vanilla
2 cups very strong brewed coffee

In a mixer add 1 1/2 cups sweetener and 1 3/4 cups whole milk.
Mix about 4 minutes or until suger is dissolved.
add 3 1/3 cups almond milk and 1 teaspoon vanilla.
Mix about 5 minutes.

In the meantime, boil on the stove mix the remaining 1/2 cups sweetener with the 2 cups brewed coffee to make a simple syrup.
Once the sweetener is dissolved pour coffee into mixer and mix until well blended.

Turn on ice cream maker and add ice cream to it.
I let mine go for 30 minutes.
It is much better if eaten right away.

Since there is no heavy cream in it, it will turn to a solid after being frozen.
Put ice cream in the microwave for 20-30 seconds to resoften (or put in blender).

Quick Homemade Marshmallows!

makes 75 marshmallos
2 Cup cold water
5 Tablespoons unflavored gelatin
1 cup-ish splenda
3 cups sugar (or splenda equivalent)
1/2 teaspoon salt
3/4 cup agave
4 tablespoons vanilla

Place 1 cup cold water in mixer
Add 5 tablespoons gelatin
Stir well and let sit for 30 minutes!

Put splenda in blender and blend on high for 2 minutes
Dust 8x13 pan with 1/2 mixture and set aside

1 cup water water in large saucepan on high
Add 3 cups sugar (or splenda equivalent), 1/2 tsp salt, and 3/4 cup agave syrup.
Whisk 1 minute
Add thermometer until it reaches 244*F
Take off heat.

Turn mixer on slow.
Pour hot sugar mixture into mixer (be careful, it could splash)
Mix on medium high for 25 minutes
Add 4 tablespoons vanilla
Beat 4 more minutes
Pour in pre-dusted splenda pan and add the other half of splenda to the top.
Put in refrigerator for 1 hour
With a sharp knife cut the outside of the dish to get the marshmallows.
Cut to size

Heat up a hot pan
Press a mashmallow onto the pan to melt the side
Push melted marshmallow into topping and repeat until done.

Makes 75 marshmallows!

Savory Oatmeal Cookies

4 tablespoons room temperature butter ( I use Earth Balance)
1/4 cup splenda
3 tablespoons light brown sugar
1 medium egg
1/2 teaspoon vanilla extract
1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
dash cinnamon, all spice, cloves
1 cup uncooked old fashioned oats
chocolate chips (optional)

Preheat oven to 350*
In mixer combine: butter, splenda and brown sugar.
Add egg and vanilla.
In a separate bowl combine flour, baking powder, baking soda, salt, cinnamon, all spice and cloves.
Slowly add flour mixture into mixer.
Fold in oats and chocolate chips.
Bake for 7-8 minutes.

Nutritional Info for 1 Cookie (no chocolate):
85 Calories, 3.7 grams fat, 12.5 mg cholesterol, 1.2 grams sugar

Melissa's Chocolate Chip Banana Muffins!

2 tablespoons light agave nectar
1/4 cup splenda
7 tablespoons butter (I use Earth Balance)
1/2 teaspoon vanilla extract
1 egg
1 1/2 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 very ripe bananas
4 1/2 tablespoons chocolate chips
2 full graham cracker sheets


Preheat oven to 350*
Mix 4 tablespoons melted butter and crushed graham crackers until it makes a crumble.
Line muffin tin with cupcake wrappers
Firmly push graham cracker mixture into 24 muffins
Bake for 7 minutes
Mix 3 tablespoons melted butter, agave nectar, and splenda in a mixer.
Add 1 egg.
In a separate bowl mix flour, salt, baking soda and baking powder.
In another bowl mash bananas with vanilla.
Rotate adding flour and banana mixture into mixer.

Put 6 chocolate chips onto each graham cracker mixture.
Add dough from mixer on top
Bake at 350* for 18 minutes. Makes 24 muffins

Peanut Butter cookies with Chocolate Chips!

- 4 tablespoons room temp. butter ( I use Earth Balance)
- 1/4 cup splenda
- 7 tablespoons sugar ( I used turbinado sugar)
- 3/4 tablespoons brown sugar
- 1 tablespoon almond milk
- 1 teaspoon vanilla extract
- 3 tablespoons peanut butter ( I use Justins Nut Butter)
- 3/4 cup flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 2 tablespoons chocolate chips ( I like mine chopped up)

Woah thats a lot of ingredients!

Preheat oven to 350*
Mix butter, splenda, sugar, brown sugar in mixer.
Add almond milk, vanilla extract and peanut butter. Mix.
In a separate bowl combine flour, salt, baking soda and baking powder.
Slowly add flour mixture to mixer.
Add in chocolate chips and mix with a spoon.

Bake at 350* for 8 minutes
Makes 13 cookies
